Chocolate Overkill
Lindt, maker of those little Lindor Truffles and the much better Lindt Excellence line, are now bringing us a bar of chocolate with 99% cocoa mass. I had always thought that such high content was only to be found in baking chocolate. To date, the highest percentage I have had is the 85% Valrhona (which I made truffles with) and it was probably as high as I'm ready to go on a normal basis. Still, I'm curious about this and will probably give it a try at some point.

my impressions? dark, to the point of being bitter. this isn't really eating chocolate anymore, it's more like pure cocoa. i needed some more standard 70% to wash it down after (& i'm a dark chocolate person, through & through). that said, having a tiny square with a cup of coffee (or even hot chocolate, i'd imagine) is actually surprisingly subliminal - the coffee & extremely dark chocolate complement each other perfectly.

Actually I have a piece of a block of 99%(or 100? I'm not sure, my friend gave it to me)in my fridge. Serena is right, it isn't chocolate anymore. It resembles dirt. But maybe my tastebuds haven't advanced to the point of being able to taste it yet...

I was in Niagara Falls, CA in June and at the World of Chocolate (You know I had to go) and I bought a bar of 99% Lint. I sat down with a hot cup of green tea and ate about half of the bar. It does have a deep chocolate flavor and melts slowly in the mouth. I could taste many layers of flavors in this chocolate. It isn't a typical eating bar and not for every one but I did finish off the rest of the bar when I arrived back in Tucson with a nice port.
I enjoyed it but it just my tastes.
